This “recipe” is for Mango Yogurt but it would work in essence for any fruit. With Greek yogurt being so high in protein I wanted to find a way to incorporate it into my kids’ lunch time. But I didn’t just want the premade flavors. So I started playing with some flavors and sweeteners to cut some of the tartness. This is 1 of the recipes when I prep the fruit and let one of the kids do the rest! To make 4 side dish servings (went with peanut butter & jelly;) this is what I used:
2 containers of plain Greek Yogurt, 6oz each (here it is cheaper per ounce to buy individual sized cups)
Yummy looking, right? It was super easy too! The longest thing was boiling the water!
All I did was cook 3 packages of gnocchi (hey, they are small packages and there are 6 of us;). Then I heated up 2 cups of cooked, sliced steak (I had in the freezer) and 1 package of chopped spinach (thawed and squeezed out). I melted 1 stick of butter and then sauteed 2 teaspoons of prechopped garlic. I added 1 1/2 tsp of salt, 1 tsp pepper and 1/2 tsp of paprika. Mix it together and eat up!
An added note: I often put in chopped chicken instead of steak. It really is that simple!
So this isn’t the best picture but this was a yummy sandwich! Grilled mushroom, roast beef, Gruyère, and fat-free sharp cheddar on Sourdough! It tasted really good together!
So I was making hot dogs for dinner when NerdDad was out of town. While the kids were very happy, I was a little disappointed because I wanted Mexican food but since NerdDad was out of town on NerdBug’s birthday… So I decided to do a bit of a Mexican dog! I had made some guacamole earlier in the day so I plopped that on there. Then I just added a crumbling of queso fresco.
