I found this recipe years ago for a super yummy biscotti. It is so good that my kids even like it without anything to dunk in!
Ingredients:
1/2 softened butter
1 1/3 cups sugar
3 eggs
1/2 tsp peppermint extract
3 cups AP flour
1 tsp baking powder
1/2 tsp salt
1/2 cup crushed peppermint mini-candy canes
1/2 cup mini semisweet chocolate chips
melted colored chocolate
Process:
Mix butter, sugar, eggs, and peppermint extract. Then blend in baking soda, salt, and flour. Then blend in crushed peppermint pieces and mini-chips. Yes, the batter is extremely stiff so I use my stand mixer.
Then dump dough onto either a greased cookie sheet or a silpat (or equivalent) lined sheet. Cut the dough in half and form into logs 10 inches by 2 inches. Bake in a 350 degree oven for 30 to 35 minutes or until they are golden brown. Then cool the logs for 15 minutes.
Next cut the logs into 1/2 inch slices and place back on the cookie sheet on their cut sides. Bake at 350 degrees for another 15 minutes or until lightly brown and crisp. I don’t wait to long since my kids like to eat them plain;). then cool on a cooling rack.
Next melt the colored chocolate in the microwave. I microwave the Meltables at 30 second increments until it is really loose and drizzable. Then I just drizzle the chocolate over the cookies. You can also dip them in semisweet chocolate (my husband’s favorite) and sprinkle with more crushed candies.
My youngest, NerdPud, has decided that she doesn’t like the skin on fruit. So this is how she dealt with her fruit slices one day at lunch. And yes, little Miss OCD arranged them herself;).

Besides plain, what’s your favorite way to eat an apple? One of my favorites are these mini-apple pies. They aren’t the standard because they have cream cheese in them. I lost my recipe but I promised NerdDad that I would create a new one! The other thing is homemade apple sauce! It is great in oatmeal.
Besides plain, what’s your favorite way to eat berries? I love a good berry cobbler or a yummy pavlova!

Besides plain, what’s your favorite way to eat a peach? Homemade peach ice cream is delightful!
Besides plain, what’s your favorite way to eat a pineapple? I love pineapple but I have to be careful with it because it is so acidic. But grilled pineapple with chocolate is always yummy. Something i do more often is canned pineapple in a dump cake!

Ever know that you are going to have a super crazy, crazy week? Well, this week is Vacation Bible School and I am still trying to go to the gym everyday (and twice on Tuesday and Thursday). So we are keeping it extremely simple over here!
Monday: Shredded Chicken and Broccoli in Rice
Tuesday: Chicken Kiev (in the freezer), Bread (either Buttery Rolls or leftover French Bread), Broccoli
Wednesday: Beans and Rice with Shredded Chicken and Broccoli
Thursday: Spaghetti with Meatballs (in the freezer)

I made 4 loaves of banana bread today as my Tackle It Tuesday!!!!! I used a recipe that I found over at Tammy’s Recipe that has wheat flour in it. The bread is moist and freezes beautifully!
